Chicken supply chain makes plans to bounce forward in 2021

How foodservice and retail outlets are adapting for future success.

Retailers want to hold onto sales gains while foodservice outlets aren’t just looking to bounce back, they want to bounce forward.

Panelists from major foodservice and retail outlets that sell chicken will discuss how their companies have adapted and share their plans for future success at the 2021 Chicken Marketing Summit, scheduled for July 18-20, 2021 at the Omni Amelia Island Resort in Fernandina Beach, Florida. The panelists include David Aldrich, poultry buyer, Meijer, Keith Anderkin, vice president, supply chain and quality assurance, Zaxby’s, Mike Hacaga, meat and seafood product innovation lead, Thrive Market and Joe Schechinger, vice president, global supply chain, Wingstop.

Aldrich currently works as a poultry buyer at Meijer. He has experience across a variety of roles throughout his six years with the grocery chain, including finance, grocery and direct store delivery (DSD) beverage, and has a bachelor’s degree from Saginaw Valley State University.

With 25-plus years working in the restaurant industry, and a focus on supply chain, Anderkin started as Zaxby’s vice president of supply chain and quality assurance in June 2020. Prior to Zaxby’s, Anderkin was a senior vice president at Arby’s Supply Chain Cooperative where he was responsible for over $1.5 billion spend annually across 3,500 restaurants during his 15 years with the brand.

Hacaga is the meat and seafood product innovation lead for Thrive Market. Committed to keeping health and the animal’s welfare first, Hacaga analyzes and interviews many farmers and fishermen directly. This “boots on the ground” approach helps Thrive Market bring healthy, high quality, humanely treated and environmentally sustainable meat and seafood to the table.

Schechinger has served as vice president, global supply chain, with Wingstop for the past three years. His teams cover supply chain, distribution, quality assurance and culinary. Before joining Wingstop, Schechinger served in a variety of supply chain management positions for restaurant chains such as Wendy’s, KFC, Pizza Hut and Taco Bell.
